Vinification
Soft pressing where free-run must obtained is fermented in steel tanks at a controlled temperature of 16 Cº. After having ended the fermentation process, the wine is left to rest for a few months with periodic shakes (batonnage) to keep the “fine lees” suspended in order to harmonise and develop furthermore its typical aroma and extraordinary body.
